QUICK & EASY RECIPE – Low calorie baked cod


Ridiculously quick and easy but super calorie saving versus buying it already prepped or using a ready made jar of sauce.  Great with a jacket potato and veg or even just pasta and some spinach.


2 servings

400g frozen cod fillets

1 1/2 tins chopped tomatoes

2 red peppers

Handful of pine nuts

salt, pepper, basil, tbsp tomato puree, tbsp cornflour


Doesn’t really need to much explaining…..whack all together in an oven proof dish and cook for 30 – 35 minutes on around 180 degrees C.
