Sometimes the classics are the best! This is my version of the sometime favourite – great for a lazy evening or when you need some comfort food. Tastes great heated up in the office too!
500g 5% fat beef mince
1 1/2 tins chopped tomatoes
3 red peppers
salt, pepper, beef stock cube, tomato puree, 2tbsp balsamic glaze, 2tbsp italian herbs
Chop the veg and literally throw everything in to the pan. Bring to the boil and simmer for 30 minutes.
Add extra seasoning if required.
Serve as you wish – personal fave – jacket potato and cheese 🙂
