QUICK & EASY RECIPE – Low calorie chicken curry

Curry is the dream – whilst a full on takeaway curry and all the trimmings is absolutely NOT off the cards for weight loss, here is my quick and easy recipe for a low calorie version – just means more room for the extras! Super simple as always!

Ingredients

4 servings
4 chicken breasts
400g courgette
2 peppers
250g mushrooms
1 chicken stock cube
1 tin chopped tomatoes
3 tsp ground coriander
2 tsp hot chilli powder
1 tsp turmeric
1/2 tsp ground ginger
1tbsp cornflour
Salt and pepper

Method

Whack everything (except cornflour) in a saucepan and simmer for 30-40mins. Add the cornflour if required to thicken. Destroy.

Here served with cucumber and yoghurt, tilda pilau rice, coconut and wholemeal wraps if I was out I would definitely go for saag aloo and peshwari naan too.
