Quick and fun mini ham and egg muffins – super high protein, low calorie and great for on the go! Give them a try and keep them in the fridge to grab during the week for breakfast or just as a snack.
6 egg whites
10 slices ham
handful of spinach
salt, pepper, chives, chilli
Cut the ham into thick strips and line the muffin tin once greased so no egg can escape through. Place diced tomato and shredded spinach evenly amongst them. Whisk up the eggs, chives, salt, pepper and chilli and distribute out evenly. Cooked on 200degrees for 15 minutes or until cooked through.
